Assemblage
The term “assemblage” in sparkling wine production refers to the blending and composition of base wines from different grape varieties, vineyard sites, or vintages in order to form a final blend for the second alcoholic fermentation inside the sparkling wine bottle. For us, this assemblage is an art that takes us several weeks, sometimes even months. The assemblage usually takes place in March and April, after the base wines have aged for approximately 7-10 months on the lees in oak barrels or stainless steel tanks. After the blending process, the final blend is prepared for the tirage filling.
