Remueur

Remueur is the french term for “riddling master.” 

In the past, there was a profession known as “Remueur,” who was the riddling master in every sparkling wine house and performed the manual riddling during the production of sparkling wines using traditional bottle fermentation. The process of riddling is often called “remuage“. As a positioning aid, the Remueur would typically mark the bottom of the bottle with a white chalk line. Experienced riddling masters, who are scarcely found nowadays, can riddle 30,000 to 40,000 bottles per day. 

Is there a quality difference between manual and mechanical riddling of champagne bottles?

Regarding the taste and effervescence of the sparkling wine, no difference can be observed between manual and mechanical riddling. In our Sekthaus, we still use both riddling methods.
